Mini muffins

Tonka bean and dark chocolate

  • 440g of sieved flour
  • 100g of brown sugar
  • 60g of sugar
  • 1 pinch of salt
  • 1/2 Tonka bean
  • 1 sachet of baking powder
  • 4dl of milk (+ 1/2 cc of lemon juice
  • leave for 10min)
  • 2 eggs
  • 80g of melted butter
  • 100g ob dark chocolate 72% Villars crushed into small pieces

Mix the dry ingredients in a bowl.

In another bowl, mix the eggs with the milk, add the butter then pour the liquid into a bowl and mix together. Add the small pieces of dark chocolate. Mix well.

Pour into a pre-greased muffin tray (up to around ¾ of its height) and bake for 25-30min in the oven at 190°C (fan assisted). Test with a knife or another sharp object. Once ready, remove from the oven and leave them to cool. Even better when eaten slightly warm!
